Creamy blend of strawberries and matcha with milk, chilled to a refreshing spring delight.

# What You Need:

→ Strawberry Layer

01 - 1.5 cups fresh strawberries, hulled and sliced
02 - 2 tablespoons honey or maple syrup
03 - 1 teaspoon lemon juice

→ Matcha Latte Layer

04 - 1 cup whole milk or dairy-free alternative
05 - 0.5 cup heavy cream or coconut cream for dairy-free
06 - 2 tablespoons granulated sugar
07 - 1.5 teaspoons high-quality matcha powder
08 - 1 teaspoon vanilla extract

# Directions:

01 - Combine strawberries, honey, and lemon juice in a blender. Blend until smooth consistency is achieved.
02 - Pour strawberry puree evenly into popsicle molds, filling each approximately halfway. Gently tap molds to release air bubbles.
03 - Freeze strawberry layer for 1 hour until partially set but not completely solid.
04 - Whisk matcha powder with 2 tablespoons warm milk in a separate bowl until completely dissolved and lump-free.
05 - In a bowl, combine remaining milk, cream, sugar, and vanilla extract. Add dissolved matcha mixture and whisk until smooth and fully incorporated.
06 - Pour matcha latte mixture over frozen strawberry layer in each mold, filling to the top.
07 - Insert popsicle sticks into each mold and freeze for at least 5 hours or until completely solid.
08 - Run molds briefly under warm water and gently pull out frozen popsicles.

# Expert Advice:

01 -
  • They're secretly indulgent—creamy matcha and juicy berries in one frozen bite, but light enough to eat three.
  • Making these feels like creating edible art, and people always ask where you bought them.
  • No baking skills required, just a blender and patience, making them perfect for beginner cooks.
02 -
  • If your matcha powder has even the tiniest lumps, your finished popsicles will have a chalky, unpleasant texture—always dissolve it in warm milk first and whisk with intention.
  • Freezing the strawberry layer first isn't optional; it's what creates those perfect two-tone stripes instead of a swirled mess.
03 -
  • If you want a marbled effect instead of clean layers, wait until the matcha mixture is poured, then gently drag a skewer or thin knife through both layers in a few swooping motions before freezing.
  • Make extra matcha paste and keep it in a small jar—it's perfect whisked into plain milk for a quick morning latte, so nothing goes to waste.
